Pane e companatico: bread in Tuscany

It was once very common to hear people talk of “pane e companatico”, meaning essentially “bread and whatever goes with it”. Bread has a central role in the Italian culinary tradition. In Italy there are 200 different types of bread which can be classified in 1500 subtypes.

There is one particular type of fruit that marks the passage from the winter to the summer… in my very personal world at least. I am talking about “nespole”. Sometimes I am amazed at how much simple things, often tastes and smells, are associated with the various moments of our lives.

Pisa is much more than the Leaning Tower. A walk in Via San Martino is a good way to find out what the city has to offer. incredible renaissance buildings, small alleys with medieval arches and architectural features, small squares with great restaurants and bars. And there are two amazing churches, the Templar church of San Sepolcro and the huge church of San Martino.
